Description
Mixed Glycerides & Sophorolipids are a type of glycolipid that are produced by yeast strains. They are made up of a hydrophilic sophorose head and a hydrophobic fatty acid tail. The fatty acid tail has 16 or 18 carbon atoms. Sophorolipids are biosurfactants, or biological detergents. They are a green and renewable alternative to traditional surfactants.
